Great article! However, I would just like to add, in addition to the benefits you wrote about on avocado pits, they are also a rich source of Vit. B17 (Laetrile), which has been known to kill cancer cells and to prevent cancer. In fact, any fruit seed is rich in B17, especially apricot kernels.

Here is how I use watermelon rind : First rinse then wash the melon before cutting it.
Separate or eat the red part, saving the pink, white and green. Slice into one inch strips.
Then cut that, like bread, into small slices. Use this to pick up hummus.
Bite off the pink and white part, just before the green rind. It is cool, fresh, and crunchy, and quite good. ...Rose

I use an entire lemon - seeds, skin and all. I chunk it up and put it in my Vitamix blender with a cup of water, a handful of greens and some stevia to sweeten and make a blended drink that's like having a lemonade. Thanks for the article because next time I can get some organic oranges or tangerines, I'll have to try this. I love the idea of being able to get the extra bioflavonoids from the white parts. Will have to try this with a watermelon as well. Thanks!
