I mix a plantain in the blender with eggs and coconut flour to make delicious pancakes. Not sure if that qualifies as cooked because the mix doesn't take long at a low heat but it is still lightly cooked.

Whoever this author is regarding plantains is very limited in where it is grown and can be attained. Plantain is a very common Caribbean and African food. My mother constantly cooks green bananas and plantains, along with yams breadfruit etc. It is something that can be attained practically anywhere in the USA because the climate is right for it. Just ask anyone of colour and they will I'm sure point you in the right direction to get it. You certainly don't have to just go to the countries he mentioned. To be honest these are hot climate country food. However, I live in the UK and eat it regularly-ish. Fry plantain is very delicious believe me. However, almost most people don't eat it raw, not sure how it tastes. Perhaps someone can inform me of how it taste eaten raw because this is most when the benefits will be gained.
