Thank you, great info.
My family and I love pasta dishes. Can you recommend the best flour for making pasta. It seems that without the gluten, it's difficult to get a nice pasta. I've done some experimenting with 60% quinoa flour mixed with 40% "OO" pasta flour and it was quite good. However , I would like to get off of wheat flour altogether.
Any help is much appreciated.

Hello, great post. I have a question about hemp flour. Would you use it in the same ratio as almond flour? For example, if I wanted to use hemp flour instead of almond flour, would the ratio be 1:1? For example, the ratio for almond to coconut flour is 1:.25 as coconut flour is so absorbent. Can you please tell me the ratio for hemp flour?

Re: Cassava
Many articles say Cassava is high carb, but is a resistant starch and has a low glycemic index. To me it sounds like you're describing the tapioca starch extract instead of cassava.

I was giddy on finding this article. Green banana flour will be my go to flour when I immigrate to Ecuador. Common there I am told. I also love the idea of Buckwheat, now off to discover if I can bring Buckwheat with me to Ecuador to plant.
